It's all about getting the right balance of salty sweet and tangy, and in this recipe we are going to cheat a little and use Japanese Mirin! I know its a "Chinese" recipe, but hey thats OKAY we can be as multi-cultural as we want here on Passion for Food! This was a Passion for Food experiment that really turned out great! It's one of the only pizza's I've ever made with NO cheese, and it's one of my all time favorite pizzas with just the right touch of Cajun spice! Pizza Dough Recipe: 2 cups bread flour ~2/3 cups hot water (110F) 1.5 teaspoons of fast rise (instant) yeast 1 teaspoon salt 1.5 teaspoons sugar Kickin' Cajun Seasoning Recipe: 1 tbsp. paprika 1 tbsp. garlic powder 1 tbsp. oregano 1/2 tbsp. kosher salt 1/2 tbsp. onion powder 1 tsp. freshly ground black pepper 1 tsp. cayenne Enjoy!

Today's Passion for Food we meet the Greek! With this wonderful classic Greek dessert, Galaktoboureko!  The names not the easiest in the world to say, but the it's actually quite easy to make and is truly an egggggcellent recipe to add to any collection! Galaktoboureko - Easy Greek Custard Pie Recipe:  For the custard: 1/2 gallon (~2L) milk 1 cup fine semolina flour 1 cup sugar 1/2 butter 6 eggs 1 1/2 teaspoons vanilla  1/2 teaspoon of salt (if unsalted butter)   For the syrup: 2 cups sugar 2 cups water zest of 1 lemon Plus one pack of Philo/Phyllo pastry and 1/2 cup melted butter for basting Bake @350 for 45 minutes.  Enjoy!
